Summer Mango Jalapeno Salsa


There are few things I enjoy more than a nice glass of wine, some blue corn chips and a solid salsa recipe. Seriously. At any given time, I can be craving one of those three things (no that does not make me an alcoholic, it makes me awesome). These are a few of my favourite things!! So naturally, as I'm DEEP in week ONE of my commitment to a brand new 3 week fitness program right now and NOT eating corn chips OR wine (I know, I'm a psycho), I needed to come up with a DEELISH salsa recipe that would make up for it all.

I present to you: the impromptu, but awesome summer mango jalapeno salsa. It's fresh. It's perky. And it goes well with pretty much anything you're throwing down on the BBQ this summer season. Chicken? Yup! Beef? Yup! Quinoa salad? YUP!

It's just the gift that keeps on giving!!


INGREDIENTS:

1/2 red onion, chopped fine (use less if onion is quite potent)

1/3 cup cilantro, chopped (use less or more to your preference)

1 large mango, cubed (simply cube with knife and remove from skin with spoon)

2 tsp lime juice

2 Tbsp chopped jalapeños

2 roma tomatoes, chopped

Salt and pepper to taste

1/3 tsp cumin

HOW-TO:

1) Chop up all ingredients, mix together and let sit in refrigerator for at least 20 minutes before serving!! (It tastes better when the flavours get to marry!)

2) Serve with literally anything! We enjoyed it with fajita chicken lettuce wraps and then again the next day with cubed sweet potatoes and fried eggs!!
