Dark Chocolate Coconut Muffins


Isn't that a mouthful? A delicious one, I promise! You know when you wake up and it's just a cold, blustery Autumn day outside and all you want to do is stay under the covers, listen to Adele on repeat and have someone cook for you? Yeah, so these muffins are perfect for days like those. And pretty much any other day as well... so I'm not sure where I was going with that. Seriously moist, chocolatey, and with great, healthy ingredients, I'm going to go ahead and call these a win!!!


INGREDIENTS:

1 cup GF flour (I use the CloudNine blend from Costco)

1 cup GF oats

1/2 cup shredded coconut

1/2 cup DF dark chocolate chips (I use the GoodLife ones!)

1 egg

1 banana

1 tsp baking powder

1/2 tsp baking soda

1/4 tsp sea salt

1/3 cup maple syrup 1 tsp chia seeds

1 cup almond milk

HOW-TO:

1) Mix wet ingredients in bowl and then add dry. Add the chocolate chips and almond milk last.

2) Preheat oven to 350.

3) Grease muffin tins with coconut oil or use muffin cups. Dollop mixture into each spot. (You can fill them pretty well all the way up).

4) Bake for 20-25 minutes and check with tooth pick. These will stay fresh in an airtight container for one week.
