Bomb Diggity Brownies


Whenever I find myself overworking and pushing the limit on my own work hours (hey, when you love what you do, the lines can get a little blurred sometimes), I will force myself off my phone (crazy addiction, hey?!), put on some good music on Spotify and create something delish in the kitch.

I don’t know what it is about cooking and baking, but for me it’s therapeutic.

Alas, last night I found myself in the kitchen with my phone in the other room, the new “earth tones” album from Bahamas bumping on the speaker and a hankering for some healthy brownies.

I’m usually a pretty humble person, but… these brownies are OFF THE CHAIN. Seriously. They are everything I’d look for in the perfect brownie: moist, chocolatey, fluffy, gluten free, dairy free, low in sugar, easy to make and high in fibre. I feel like a bloody genius at this point. And now I get to share them with you so everybody wins!! Yay!



INGREDIENTS:

3 squares GiddyYo raw peppermint dark chocolate

1/3 cup coconut oil

2 eggs

3/4 cup palm sugar

2 1/2 Tbsp cocoa

1/3 cup cacao nibs

2 Tbsp Flax Meal

3 Tbsp GF Flour (I use CloudNine blend from Costco)

pinch sea salt

HOW TO:

  1. Put chocolate squares and coconut oil in glass bowl and microwave for 30 seconds to melt. Stir and then microwave 30 more seconds until smooth.

  2. Add coconut oil mixture to large mixing dish and beat in eggs and sugar.

  3. Add cocoa, flax, cacao nibs, flour and salt and stir really well.

  4. Preheat oven to 350 and grease square glass baking dish with coconut oil.

  5. Add mixture to baking dish and bake for 20-25 minutes at 350.

  6. Let cool for 10 minutes before serving.

  7. Enjoy as is or with a cup of herbal tea!

Be forewarned, these brownies are called the Bomb Diggity for a reason!! Don’t say I didn’t warn ya!
