I love breakfast food. Like actually. It's my favourite. Omelettes, pancakes, fruit salad, smoothies, fried eggs on toast with avocado, you name it. Breakfast is my JAM!!! So you better believe I've got like 46 different pancake recipes for when the mood strikes!
These banana oat cacao pancakes are dense, delicious and will definitely hit the spot!!
INGREDIENTS:
1 banana, mashed
2 eggs, whisked
1 cup almond milk (for consistency)
1/3 cup maple syrup
1 tsp coconut oil
1/2 tsp cinnamon
1/4 tsp sea salt
1 cup GF oats
1 cup GF flour (I love Cloud9 from Costco)
1 tsp cacao powder (not cocoa powder)
1 tsp baking powder
1/2 tsp baking soda
HOW-TO:
1) Mix wet ingredients in bowl. Add dry ingredients and mix well.
2) Heat medium sized fry pan and add 1tsp coconut oil to melt.
3) Dollop pancake batter into pan and cook around 3 minutes each side, or until done!
We love putting natural PB and maple syrup on ours, but you can really dress them however you like!! Enjoy!
